Cajun Style Walleye Fishsticks
Ingredients
- 1 lb walleye fillets, cut into strips
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup cornmeal
- 2 tsp Cajun seasoning
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper (optional, for extra heat)
- 1/2 cup buttermilk
- Vegetable oil for frying
Instructions
1. Prepare the dredging stations: In one shallow dish, mix the flour with salt and pepper. In another, whisk the eggs with buttermilk. In a third dish, combine cornmeal, Cajun seasoning, garlic powder, smoked paprika, and cayenne pepper.
2. Coat the fish: Dip each walleye strip into the flour mixture, then into the egg mixture, and finally coat it with the seasoned cornmeal.
3. Heat the oil: In a deep skillet, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).
4. Fry the fish sticks: Carefully place the coated fish sticks into the hot oil and fry for about 3-4 minutes per side, or until golden brown and crispy.
5. Drain and serve: Remove the fish sticks and place them on a paper towel-lined plate to drain excess oil.
6. Serve with tartar sauce, or a squeeze of fresh lemon.
